LOCALLY OWNED BAKERY OPENING IN DOWNTOWN FAIRFIELD

By Mark Wells Apr 28, 2025 | 6:00 AM

The Fairfield Chamber of Commerce will be hosting a ribbon cutting on Wednesday, April 30th at 10am  to welcome a new business in downtown Fairfield. 6-juan-8 Bakery will be opening their doors at 208 E Main Street for business.  The hours of operation will be Monday through Friday, 6am to 4pm and Saturday, 6am to 2pm.   Locally owned by long-time Wayne County resident Samantha Baker, the bakery has been under renovation since October 2024.  The bakery will feature bagels, danishes, turnovers, donuts, cinnamon rolls, cookies, cakes, pies, breads and gluten free items.  Baker says they will have some bistro seats for people to sit in also.

Juan Diaz, a Fairfield resident, is the namesake and baker behind the business. Juan served in the US Army as a Ranger 82nd Airborne Division for multiple years and was deployed overseas. After returning to the states he attended pastry school at the University of Tampa with the dream of owning his own bakery one day. Spending the past decade as lead chef for Carnival cruises, he is ready to bring his skills to the Fairfield area.

Juan and Samantha, along with Emily Rivera, the face that will be greeting you every day, are excited to bring a new business to the Fairfield community.
