Mitsy K Elliott, 50, Fairfield

Mitsy K. Elliott, 50, of Fairfield, died at 6:00pm on Sunday, April 23, 2023, at Deaconess Midtown Hospital in Evansville, IN, surrounded by her family.

Mitsy was born on January 26, 1973, in Belleville, Nebraska, to Jerry and Janet (Hillegeist) Houser.  On November 19, 1994, she married the love of her life, Jeff Elliott.

Mitsy had formerly been the head cook for Brookstone Estates in Fairfield. Most recently, she had been the head cook for the Jasper Grade School but, decided to give it up and be “Mama Mitsy” and care for her grandchildren.  She was a very devoted wife, mother, and grandmother.  Mitsy was a member of the First Baptist Church in Fairfield where she was known for her cooking of delicious dishes. She was eager to volunteer her cooking skills any time the church needed someone. Her family said she had two secret ingredients for most of her dishes. . garlic salt and onion salt. She would tell them, “If a dish doesn’t taste right, add more garlic salt!”

Survivors include her husband Jeff Elliott, her parents Jerry and Janet Houser, her maternal grandmother Kay Hillegeist all of Fairfield, her paternal grandmother Ardell Houser of Plainville, KS, three daughters B.J. (Luke) Townsend and Kaytie Elliott and Fiance’ Dillon Talbert all of Fairfield, and Jaymie (Jordan) Fry of Geff, IL, six grandchildren Jensen Elliott, Jasmyn Fry, Kenton Courtright, Kinsley Elliott, Justin Fry, and Khristopher Elliott, a brother Matthew (Brittny) Houser of Rockford, IL, a sister JoAnna (Michael) Harvey of Bloomington, IN, along with several nieces and nephews.

She was preceded in death by her maternal grandfather Joe Hillegeist, her paternal grandfather Bill Houser, and a special aunt Bev Young.

Funeral services for Mitsy Elliott will be at 11am on Friday, April 28th at the Johnson and Vaughn Funeral Home in Fairfield with burial to follow in Cumberland Chapel Cemetery. Visitation will be from 4pm-7pm on Thursday, April 27th at the funeral home. Memorial donations  can be made to help with funeral expenses and will be accepted at the Johnson and Vaughn Funeral Home which is in charge of arrangements.
